Lee's divine 'Lemony Herb Crackers'



If you haven’t heard of her already, Lee Holmes is one to watch. She’s a wholefoods chef, the author of a truly amazing recipe book ‘Supercharged Food’, and an all-round inspiration. Lee is proof that you are what you eat. After discovering she had an autoimmune disease and fibromyalgia, Lee decided to heal her body with whole, natural foods and lots of green juice. We have had the pleasure of getting to know Lee and she positively radiates health. All of her recipes are gluten, wheat, dairy, yeast and sugar free. But Lee’s also a total foodie, so the dishes she makes (at midnight in her kitchen mostly) are absolutely divine. You’re in very safe hands.

So let’s get on to these lemony crackers. In Lee’s words, “they work well as a snack if you are feeling peckish in between meals – you can eat them instead of a carb or sugar-filled snack; they’re such a healthy way to refuel your body!” And to make these little beauties, all you need is 7 ingredients and 10 minutes. Let’s get cracking (no pun intended).

Lemony Herb Crackers
Makes about 35 crackers 

Ingredients

1 ¼ cups almond meal
½ teaspoon sea salt
½ cup sesame seeds
1 TBS dried mixed herbs
1 egg (opt for free range)
1 ½ tablespoons extra virgin olive oil
1 tsp lemon rind

Method

1. Preheat the oven to 175°C and grease a baking tray
2. Combine the almond meal, salt, sesame seeds, mixed herbs and lemon in a bowl
3. In a small jug whisk the egg, then slowly add the olive oil while still whisking
4. Pour egg mixture into the dry ingredients and mix to form a firm dough. If it is too dry to roll out, mix in a little water
5. Roll the dough out on a sheet of baking paper to a thin rectangle of about 35 x 25 cm
6. Place the prepared baking tray face down over the top then invert the two together so you now have the dough on top. Peel off the baking paper
7. Using a sharp knife cut the dough into 5 cm squares
8. Bake until crisp, 12-15 minutes, turning them halfway through
9. Remove from the oven and let cool completely before serving
10. Keep in an airtight container for freshness

Nutrition

Almond meal is an excellent low-carb, high-protein option, which adds a sweet taste to the crackers
Sea salt (Lee uses celtic in her video) is a great way to balance your electrolytes (and restore your poor adrenals); it’s also packed full of minerals!
Lemon rind gives the crackers a zesty, citrusy tang, which comes from the aromatic oils and perfumes that are contained in the rind

Boost your immunity this Autumn!


It's that time of year when everyone starts to get sick. You can almost feel the cooler Autumn air climb into your chest and sinus cavities, setting up shop for the season. The tickle in your throat, the night-time cough, the runny nose. Your body is sending you signals, waving a white flag in surrender. But, do you actually take heed and listen?

There are a few simple acts of self-love that can really help you in boosting your immunity and staving off the worst of the season's colds. And the best bit, you won't have to reach for that dreaded and unnecessary dose of anti-biotics.

1) Thyme tea:
Thyme helps calm the non-stop coughing, soothing the throat and relieving headaches. Thyme is an expectorant, which means it helps to shift the mucous build up in the chest. Don't reuse the thyme, use a couple of fresh sprigs for each boil.

2) Hot water, lemon + manuka honey tea:
A classic remedy but one that works. The anti-bacterial honey, the alkalising lemon and of course the warming hot water make this the perfect combination to nourish, hydrate and flush out the flu.

3) Steam:
Boil a big pot of water, add in fresh thyme or eucalyptus oil. With a towel over your head and the pot, inhale the steam for a good 15-20 minutes. This will help break down the congestion.

4) Chicken soup:
The famous chicken soup. The natural anti-biotic. You'll want to cook up a big pot with chicken and bones. It's the fat which is anti-microbial and will give your body energy to heal. Add in lots of nourishing veggies: spinach, leek, kale, carrots, pumpkin, red capsicum, barley, parsley, thyme and a touch of chilli.

5) Sleep:
The best armour against colds and flus. Rest. Now isn't the time to push yourself. Rest, rest, rest. And if sleep doesn't come easily spend some quiet time at home, meditate, do some gentle stretches or wind down in a hot bath.

Don't wait until the last moment when it's too late. Take the time to switch into your body and notice the little clues it’s leaving you. With a little t.l.c you can hopefully skip the flu season altogether!

Do your summer drinks need a detox?

This week, we bring you some super tasty recipes from the very lovely Claire Obeid, a Sydney-based yoga teacher, holistic health coach and blogger at the equally lovely Saha Space.

All you need is a big old ice tea jug (Claire recommends one from T2), some basic ingredients and a willing guinea pig to test them on.

1) Ginger, lemon, mint and raw honey

Grate a thumb sized amount of ginger into a 2ltr pot
Boil up water for 15 minutes
Add in 1 tbsp of raw honey (you can use rice syrup or any other healthy/natural sweetener)
Once cooled pour into jug
Serve with a slice of lemon, mint sprigs and ice cubes

2) Rose, cinnamon and apple

Boil up a 2ltr pot of water with cinnamon bark sticks (not the quills for cooking but actual bark)
In jug add in slices of fresh apple and rose bud tea (T2!)
Pour in boiled cinnamon tea
Serve chilled with a dash of cinnamon powder

3) Green tea, mint and lemon

Boil water
In jug add green tea, lemon slices and fresh mint
Pour water in, cool and chill

4) Pomegranate and fresh lime 

Pomegranate concentrate from the health food shop is the best option
Add to 2ltrs of hot water + add fresh juice from 2 limes
Pour into jug and chill
Add in fresh lime slices (and pomegranate seeds if you can find them) to serve on ice
