Our new favourite dessert



We absolutely love this new smoothie recipe. It's your new cleansing bestie as of 1st September 2012 – yep, this little beautie will be replacing our current Number 6. It's bigger (in flavour not calories) and badder than ever.

Please welcome the ABC Dessert Smoothie.

7 simple ingredients:

1. Almond milk
2. Coconut water
3. Filtered water
4. ABC nut butter*
5. Four dates
6. Raw cacao
7. Cinnamon

*ABC = Almonds, Brazil Nuts and Cashews

In terms of quantities, we recommend playing around with them to suit your individual tastes. That and the exact measurements are a trade secret!

The health lowdown:

It's packed full of antioxidants, vitamins and minerals, with a healthy dose of protein and good fats. The ABC Dessert Smoothie is soothing, with a pinch of cinnamon to help combat dysbiosis/candida, and a hit of super-nutrients to boost energy, skin health and immunity. We've been careful to monitor the carb content as usual – using only four dates to sweeten. What we absolutely didn't skimp on, taste. The nut butter adds a touch of healthy but indulgent yumminess.

It's official, we're in love. And you can be too from 1st September 2012.

Coconut & almond bliss balls!


We sat down with the lovely Lee Holmes (foodie, chef and author of Supercharged Food) the other day over a chai in Bondi and listened eagerly as she shared some of the delicious recipes in her book. We haven’t been able to get this one off our minds and we thought you might like it too!

Ingredients


For 14-16 balls of yumminess…

50 g almond meal
30 g coconut flakes
40 g sesame seeds
125 g chopped mixed nuts*
7 tbsp almond or cashew butter, softened
3 tbsp tahini
½ tsp natural vanilla extract
8 drops liquid stevia
Extra sesame seeds, for coating
Extra chopped mixed nuts, for coating
*Such as walnuts, cashews, pistachios

Preparation


1. Put the almond meal, coconut flakes, sesame seeds, nuts, nut butter, tahini, vanilla and stevia in a bowl  and mix with a wooden spoon until combined.
2. Using your hands, take scant tablespoonfuls of the mixture and roll each one into a ball. Roll half the balls in the sesame seeds and the other half in the chopped nuts, coating them all over.
3. Place the balls on a flat tray and refrigerate until party time.

Tips from the Chef


 You can easily make these bliss balls the day before you need them.
 They will harden when you refrigerate them, so pull them out of the fridge about 30min before you plan to serve them.

And there you have it. Hard to believe how easy these are to make. Not to mention that, like all of Lee’s recipes, they are gluten, wheat, dairy, yeast and sugar free. Enjoy!

Easy peasy almond milk!

Claire (our lovely new PR Manager and the brains/heart/soul behind the Saha Space and the Wellness Project) shared a super yummy almond milk recipe with us so we thought we'd share it with you...

Almond milk is so easy to make, it’s almost ridiculous to buy it! And, if you buy a big 1kg bag of almonds you can use half to make 2 litres of almond milk and the remaining 500g as a snack – don’t forget to soak + dehydrate your nuts first!

Ingredients:
1 kg of almonds
Filtered water
Himalayan rock salt
2- 3 seeded (pre-soaked) dates (optional)
Muslin cloth, fine sieve or nut milk bag
Large glass bottle


Preparation:
In a large pot/bowl pour in your 1kg of almonds, add water and a teaspoon of salt
Let it sit overnight for at least 8 hours
In the AM, drain and rinse
Separate out 500g of your almonds and place on a baking tray in the oven, 60 degrees for 8-10 hours. Use the rest for your almond milk!
Place 2 cups of almonds and 5-6 cups of filtered water into your blender at a time
Blend until really smooth
Pour into your sieve/muslin cloth or bag over a big pot and let it drain. You can get more out by pushing through the sieve with a spoon or squeezing the cloth/bag
The left over mixture is your own homemade almond meal – keep this in containers in the freezer and use it for cookies, baking, adding to muesli or smoothies
Once you have drained your almond milk, place it back into the blender and add in the dates. Blend away to mix it all well. The dates are a perfect way to add natural sweetness to the milk. If you want you can add any of the following: vanilla, stevia, cinnamon, nutmeg, cloves, cacao etc
Pour into a glass bottle and store in the fridge for 4-5 days

Drink in your coffee, tea, smoothies, or on its own! Yum.
