Lee's divine 'Lemony Herb Crackers'



If you haven’t heard of her already, Lee Holmes is one to watch. She’s a wholefoods chef, the author of a truly amazing recipe book ‘Supercharged Food’, and an all-round inspiration. Lee is proof that you are what you eat. After discovering she had an autoimmune disease and fibromyalgia, Lee decided to heal her body with whole, natural foods and lots of green juice. We have had the pleasure of getting to know Lee and she positively radiates health. All of her recipes are gluten, wheat, dairy, yeast and sugar free. But Lee’s also a total foodie, so the dishes she makes (at midnight in her kitchen mostly) are absolutely divine. You’re in very safe hands.

So let’s get on to these lemony crackers. In Lee’s words, “they work well as a snack if you are feeling peckish in between meals – you can eat them instead of a carb or sugar-filled snack; they’re such a healthy way to refuel your body!” And to make these little beauties, all you need is 7 ingredients and 10 minutes. Let’s get cracking (no pun intended).

Lemony Herb Crackers
Makes about 35 crackers 

Ingredients

1 ¼ cups almond meal
½ teaspoon sea salt
½ cup sesame seeds
1 TBS dried mixed herbs
1 egg (opt for free range)
1 ½ tablespoons extra virgin olive oil
1 tsp lemon rind

Method

1. Preheat the oven to 175°C and grease a baking tray
2. Combine the almond meal, salt, sesame seeds, mixed herbs and lemon in a bowl
3. In a small jug whisk the egg, then slowly add the olive oil while still whisking
4. Pour egg mixture into the dry ingredients and mix to form a firm dough. If it is too dry to roll out, mix in a little water
5. Roll the dough out on a sheet of baking paper to a thin rectangle of about 35 x 25 cm
6. Place the prepared baking tray face down over the top then invert the two together so you now have the dough on top. Peel off the baking paper
7. Using a sharp knife cut the dough into 5 cm squares
8. Bake until crisp, 12-15 minutes, turning them halfway through
9. Remove from the oven and let cool completely before serving
10. Keep in an airtight container for freshness

Nutrition

Almond meal is an excellent low-carb, high-protein option, which adds a sweet taste to the crackers
Sea salt (Lee uses celtic in her video) is a great way to balance your electrolytes (and restore your poor adrenals); it’s also packed full of minerals!
Lemon rind gives the crackers a zesty, citrusy tang, which comes from the aromatic oils and perfumes that are contained in the rind

Coconut & almond bliss balls!


We sat down with the lovely Lee Holmes (foodie, chef and author of Supercharged Food) the other day over a chai in Bondi and listened eagerly as she shared some of the delicious recipes in her book. We haven’t been able to get this one off our minds and we thought you might like it too!

Ingredients


For 14-16 balls of yumminess…

50 g almond meal
30 g coconut flakes
40 g sesame seeds
125 g chopped mixed nuts*
7 tbsp almond or cashew butter, softened
3 tbsp tahini
½ tsp natural vanilla extract
8 drops liquid stevia
Extra sesame seeds, for coating
Extra chopped mixed nuts, for coating
*Such as walnuts, cashews, pistachios

Preparation


1. Put the almond meal, coconut flakes, sesame seeds, nuts, nut butter, tahini, vanilla and stevia in a bowl  and mix with a wooden spoon until combined.
2. Using your hands, take scant tablespoonfuls of the mixture and roll each one into a ball. Roll half the balls in the sesame seeds and the other half in the chopped nuts, coating them all over.
3. Place the balls on a flat tray and refrigerate until party time.

Tips from the Chef


 You can easily make these bliss balls the day before you need them.
 They will harden when you refrigerate them, so pull them out of the fridge about 30min before you plan to serve them.

And there you have it. Hard to believe how easy these are to make. Not to mention that, like all of Lee’s recipes, they are gluten, wheat, dairy, yeast and sugar free. Enjoy!

A ridiculously yummy (and super healthy) treat!

This week, we have a fabulous recipe for Dairy-Free Ice Cream from the lovely Lee Holmes at Supercharged Food. Enjoy!

Ingredients

2 cups cold almond milk
2 teaspoons gelatin
2 egg yolks
1 x 400 ml tin coconut milk
1 cup cashew nuts
1/2 cup coconut flakes
1/3 teaspoon liquid stevia
2 teaspoons vanilla extract

Preparation

1. Pour the almond milk into a small saucepan and sprinkle the gelatin over the surface.
2. Leave for a few minutes while the gelatin softens.
3. Put the saucepan over a low heat and stir the mixture until the milk has heated and the gelatin dissolved.
4. Remove from the heat and place the saucepan in a sink of iced water so that the milk can cool to room temperature.
5. Put the egg yolks in a blender and process until light and frothy.
6. Add the coconut milk, coconut flakes, stevia, vanilla and a pinch of sea salt and process until well combined.
7. Add the gelatin milk and blend for a few more seconds.
8. Pour mixture into an ice cream container and put in the freezer.
9. After an hour mix it up with a stick blender or fork and then return it to the freezer for another hour. Do this one more time, as it breaks up the ice crystals which cause the ice cream to be more icy than creamy.
10. The ice cream will be quite hard when it comes out of the freezer so place it onto the counter for 10 minutes before serving.

Comments

Not only is this recipe dairy-free (heaven for a dairy intolerant like me), it’s also sweetened with stevia – a natural sweetener that has a positive impact on blood sugar levels and insulin sensitivity. On top of this, no sugar means no feeding the nasty bacteria in your gut (which in turn means no bloating)! Yes please.
